Kumara, silverbeet and egg breakfast hash

Kumara and silverbeet are in most New Zealand kitchens and gardens, and this hash makes the most of both. Golden kumara cubes, wilted silverbeet and eggs cooked in the pan make a filling breakfast that keeps you going until lunch. It also works as an easy dinner.

Why this supports your hormones

Kumara gives slow-release carbohydrate and fibre, and the eggs add protein and choline. Together they help keep blood sugar steadier through the morning, which can reduce the energy dips and cravings that make hormone symptoms feel worse. Silverbeet adds magnesium and fibre.
