Hot-smoked salmon, green bean and potato salad

Hot-smoked salmon is easy to find in New Zealand supermarkets and needs no cooking, which makes this a fast lunch or light dinner. Baby potatoes bring slow carbohydrate, green beans and rocket bring freshness, and a lemon and mustard dressing pulls it together.

Why this supports your hormones

Salmon is a rich source of the omega-3 fats EPA and DHA, which play a role in the body's inflammatory balance and are relevant to painful periods and endometriosis. Pumpkin seeds add zinc and magnesium. The potatoes and beans add carbohydrate and fibre, so the meal is balanced and keeps blood sugar steady.
